Without more on-the-ground information, it's difficult to say what their origin or age is. I think the star that you found is just an incidental pattern that your eyes found, not a part of a purposeful design.
They look too uneroded to be very old, but the drier the climate the longer such features stay visible. They may simply be roads used by ranchers in this very large dry area. Some straight lines turn into switchbacks as they climb mountain slopes, leading me to give much credit this hypothesis.
Also in the area are sets of lines that look like fields constructed to capture or distribute water. Perhaps the intermittent creek nearby at one time was larger. Further to the west it does look like a farming community is using these semi-parallel lines as fields - or irrigation channels for fields.
